Eily's idea sounds great.  It seems like it would balance many things out past 500.  I especially like the idea about the points because it would allow the character to focus on certain stats, rather than just getting additional hr/dr/ac.  I'm down for those figures.  And if need be, I'll volunteer to test it out.
